A delicious and healthy twist on classic chicken noodle soup, loaded with veggies and whole wheat noodles for a hearty and nutritious meal.
Ingredients:
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 2 cups shredded cooked chicken
- 1 cup whole wheat noodles
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Add the carrots, celery, onion, and garlic to a large pot
Add olive oil and cook until the vegetables are soft
Chicken shreds, noodles, thyme, rosemary, salt, and pepper should all be added
Bring to a boil, then lower the heat and let it cook slowly until the noodles are done
If you need to, change the seasoning
Serve hot with fresh parsley on top
