Ingredients:
- 2 lbs boneless, skinless chicken thighs, diced
- 1 cup cauliflower rice
- 1 cup broccoli florets
- 1/2 cup diced bell peppers
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Season diced chicken thighs with salt, pepper, oregano, and thyme
Set the pressure cooker to saut mode and heat olive oil
Add seasoned chicken and brown on all sides
Add diced onions and garlic, saut until fragrant
Stir in cauliflower rice, broccoli, bell peppers, and chicken broth
