Ingredients:
- 1 cup cooked quinoa
- 1 ripe banana
- 1/2 cup blackberries
- 1/4 cup almond milk
- 2 tbsp maple syrup
- 1 tbsp ground flaxseed
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
- Coconut oil for greasing
Instructions:
Preheat oven to 350F 175C
In a blender, combine cooked quinoa, banana, blackberries, almond milk, maple syrup, ground flaxseed, vanilla extract, baking powder, and salt
Blend until smooth
Grease a muffin tin with coconut oil
Pour the batter into the muffin tin, filling each cavity about 3/4 full
Bake in the preheated oven for 20-25 minutes, or until the cakes are set and slightly golden on top
Remove from oven and let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely
