Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 cup pesto sauce
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped red bell pepper
- 2 cloves garlic, minced
- 1 egg, beaten
- Salt and pepper to taste
- 1 cup cooked couscous
- 2 tablespoons olive oil
Instructions:
Rinse the quinoa thoroughly under cold water
In a medium saucepan, bring 2 cups of water to a boil
Add the rinsed quinoa and reduce heat to low
Cover and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed
Remove from heat and let it cool slightly
In a large mixing bowl, combine the cooked quinoa, pesto sauce, breadcrumbs, grated Parmesan cheese, chopped onion, chopped red bell pepper, minced garlic, beaten egg, salt, and pepper
Mix until well combined
Stir in the cooked couscous and mix again until all ingredients are evenly distributed
Form the mixture into patties using your hands
You should be able to make 6-8 patties, depending on the size you prefer
Heat olive oil in a large skillet over medium heat
Place the quinoa patties in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and crispy
Serve the Pesto Quinoa Patties with Couscous hot, garnished with additional pesto sauce if desired
