Ingredients:
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup dairy-free margarine, softened
- 1/2 cup dairy-free chocolate chips
- 1 tsp vanilla extract
Instructions:
Preheat the oven to 350F 175C
In a mixing bowl, cream together the softened margarine, powdered sugar, and vanilla extract until smooth
Gradually add the flour to the mixture, stirring until a dough forms
Roll out the dough on a floured surface to about 1/4 inch thickness
Using a cookie cutter, cut out rounds of dough and place them onto a baking sheet lined with parchment paper
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove from the oven and let the cookies cool completely on a wire rack
In a microwave-safe bowl, melt the dairy-free chocolate chips in 30-second intervals until smooth
Spread a layer of melted chocolate onto the bottom side of half of the cooled cookies
Top each chocolate-covered cookie with another cookie to form a sandwich
Allow the chocolate to set before serving
