This Vegan Veggie Rice Bake is a wholesome and flavorful dish packed with healthy vegetables and protein-rich chickpeas. Its easy to make and perfect for a nutritious weeknight meal.
Ingredients:
- 2 cups brown rice
- 4 cups vegetable broth
- 1 cup diced bell peppers
- 1 cup diced zucchini
- 1 cup diced carrots
- 1 cup diced onion
- 1 cup diced tomatoes
- 1 cup diced mushrooms
- 1 cup frozen peas
- 1 can 15 oz chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Before you start cooking, heat the oven to 375F 190C
In a large baking dish, combine the brown rice, diced vegetables, chickpeas, and minced garlic
Add paprika, thyme, oregano, salt, and pepper, and then drizzle olive oil over the top
Toss everything to cover it all
Add the vegetable broth and mix everything together
Put the baking dish in a hot oven and cover it with foil
Bake for 45 to 50 minutes, or until the rice is done and the vegetables are soft
After taking it out of the oven, let it cool down for a few minutes before you serve it
Enjoy while hot
