Ingredients:
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cubed
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1/4 cup all-purpose flour
- 1 lb potato gnocchi
- 1 cup frozen peas
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
It will take about 5 minutes of cooking after adding the cubed chicken breasts until they are browned on all sides
Add the minced garlic and chopped onion
Cook for about three minutes, until the onion is soft
Then add the chicken broth and bring it all to a low boil
Mix heavy cream, milk, and flour in a different bowl with a whisk until the mixture is smooth
Slowly pour the cream mixture into the soup while stirring all the time
Place the gnocchi in the pot and cover it
Simmer for 10 minutes, stirring every now and then
Add the frozen peas and stir them in
Simmer for five more minutes
Add pepper and salt to taste
Grate some Parmesan cheese on top and serve hot
