A savory and slightly sweet slow cooker cashew chicken dish with tender chicken pieces, crunchy cashews, and a flavorful sauce.
Ingredients:
- 1 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 3 tbsp cornstarch
- 1/4 tsp black pepper
- 1 cup low sodium soy sauce
- 4 tbsp rice vinegar
- 4 tbsp ketchup
- 2 tbsp sweet chili sauce
- 2 tbsp brown sugar
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- 1/4 tsp red pepper flakes
- 1 cup cashews
- 2 green onions, thinly sliced
Instructions:
To coat the chicken pieces, mix the cornstarch and black pepper in a bowl
Putting soy sauce, rice vinegar, ketchup, sweet chili sauce, brown sugar, garlic, ginger, and red pepper flakes in the slow cooker is a good idea
Stir the chicken in the slow cooker to coat it with the sauce after adding it
Turn the heat down to low, cover, and cook for four to five hours, or until the chicken is fully cooked
During the last 30 minutes of cooking, add the cashews and mix them in
Place on top of rice and top with green onions
