Ingredients:
- 1 cup whole wheat flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mashed ripe bananas
- 1/2 cup chopped pecans
- 1 cup buttermilk
- 1 egg
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
Instructions:
In a mixing bowl, combine whole wheat flour, brown sugar, baking powder, baking soda, and salt
In another bowl, mix mashed bananas, buttermilk, egg, vegetable oil, and vanilla extract
Combine the wet and dry ingredients, then fold in chopped pecans
Heat a griddle or non-stick skillet over medium heat and lightly grease it with oil or cooking spray
Pour 1/4 cup of pancake batter onto the griddle for each pancake
Cook until bubbles form on the surface, then flip and cook until golden brown on both sides
Serve with maple syrup and additional banana slices and pecans if desired
