A hearty and nutritious minestrone soup cooked slowly to perfection in a crockpot. Packed with a variety of vegetables, beans, and pasta, this soup is a comforting and flavorful meal for any day.
Ingredients:
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz cannellini beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chopped spinach
- 1 cup small pasta like ditalini
- 1/4 cup grated Parmesan cheese optional
Instructions:
Carrots, celery, onion, and garlic should all be put in the slow cooker
Pepper, oregano, basil, thyme, diced tomatoes, vegetable broth, and kidney beans should all be added
Use a stir to mix
For 6 to 8 hours, or until the vegetables are soft, cover and cook on low heat
Add the chopped spinach and pasta to the slow cooker about 30 minutes before you want to serve
Mix well
Keep cooking with the lid on until the pasta is soft
If you want, you can add grated Parmesan cheese on top while its still hot
