Ingredients:
- 6 large sea scallops
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
Instructions:
Use paper towels to dry the scallops, and then sprinkle salt and pepper on both sides
In a pan, heat the olive oil over high heat until it shimmers
Make sure there arent too many scallops in the pan when you add them
Sear them for two to three minutes on each side, until they are golden brown and caramelized
Take the scallops out of the pan and set them aside
Turn down the heat to medium and add the butter to the pan
When the butter melts, add the minced garlic and cook for 30 seconds, until the garlic smells good
Add the lemon juice and stir it in, making sure to get all the browned bits off the bottom of the pan
Add the scallops back to the pan and cover them with the sauce
Cook for one more minute to heat them through
Before you serve, sprinkle with chopped parsley
Enjoy right away
