Creamy Chicken Tortilla Soup is a tasty and comforting dish that is great for cold days. In a rich and creamy broth, it has tender chicken, hearty beans, sweet corn, and spices that smell great.
Ingredients:
- 1 lb chicken breast, cooked and shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips for garnish
- Shredded cheese for garnish
- Fresh cilantro for garnish
- Lime wedges for garnish
Instructions:
Add the onion and garlic to a large pot and cook them until they become soft
Blend black beans, corn, chili powder, cumin, salt, and pepper together
Add chicken broth and mix well
Bring to a low boil
Add the chicken shreds and stir
Then let it cook for 15 to 20 minutes
Crush tortilla chips, shred cheese, fresh cilantro, and squeeze of lime juice on top of the hot dish before serving
