Ingredients:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can 15 ounces black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup tomato sauce
- 1 cup vegan cheese, shredded
- 2 tablespoons fresh cilantro, chopped optional
Instructions:
Preheat the oven to 375F 190C
In a medium saucepan, bring the vegetable broth to a boil
Add quinoa, cover, and reduce heat to low
Simmer for 15 minutes or until quinoa is cooked and liquid is absorbed
In a large skillet, heat oil over medium heat
Add onion, bell pepper, and garlic
Cook until softened, about 5 minutes
Stir in black beans, corn, cumin, chili powder, salt, and pepper
Cook for another 3-4 minutes
Add cooked quinoa and tomato sauce to the skillet, stirring until well combined
Transfer the mixture to a lightly greased casserole dish
Sprinkle vegan cheese evenly over the top
Bake for 20-25 minutes or until the cheese is melted and bubbly
Garnish with chopped cilantro before serving, if desired
