Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 pints ice cream any flavor
Instructions:
Warm the oven up to 175F 350C
Put parchment paper on the bottom of a baking sheet
Mix flour, cocoa powder, baking powder, and salt in a medium-sized bowl with a whisk
In a different large bowl, beat the butter and sugar together until they are fluffy and light
The egg and vanilla extract should be added and mixed in well
Mix the dry ingredients into the wet ingredients one at a time until dough forms
Cut the dough in half and press out each half into a rectangle shape
Put it in the fridge for at least an hour after wrapping it in plastic wrap
Between two pieces of parchment paper, roll out each piece of dough to about 1/4 inch thick
Cut out shapes with a cookie cutter and put them on the baking sheet that has been prepared
It should be baked for 10 to 12 minutes, or until the edges are set
Let it cool all the way down
To make a sandwich, put ice cream on one cookie and then put another cookie on top of it
Do it again with the rest of the ice cream and cookies
Before you serve, wrap each sandwich in plastic wrap and freeze it for at least two hours
