Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 12 PEEPS marshmallow chicks
- Food coloring optional
- Sprinkles for decoration
Instructions:
Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk
Put the softened butter and granulated sugar in a large bowl and mix them together until they are light and fluffy
One egg at a time should be added while beating
The vanilla and almond extracts should then be added
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
To use food coloring, split the dough into several pieces and add a few drops of color to each one
Mix until you get the color you want
Cover the dough with plastic wrap and put it in the fridge for at least an hour
Warm the oven up to 350F 175C and put parchment paper on baking sheets
Roll out small pieces of the chilled dough into balls
Take them off the baking sheets and place them on them, leaving some space between each one
Press a PEEPS marshmallow chick gently into the middle of each cookie ball
Put the cookies in an oven that has already been heated for 10 to 12 minutes, or until the edges are just beginning to turn golden
As soon as you take the cookies out of the oven, decorate them with sprinkles while they are still soft
For a few minutes, let the cookies cool on the baking sheets
Then, move them to wire racks to cool completely
